Gwyneth Paltrow has an impressive list of friends. Every week she trots them out so they can share what they eat, read and listen to for our entertainment pleasure. And indeed, it is very entertaining. Last week, Giancarlo Giametti, a close personal friend who has Gwyneth over for dinner often, shared his recipe for a simple homemade, never-fail tomato sauce. I made it on Saturday night and it is delicious! It reminded me of meals in Italy. Obviously I've been adding to much stuff to my sauce. I am hereby reformed of this bad habit. In a large saucepan, slowly cook six cloves of thinly sliced garlic in a couple tablespoons of olive oil for five minutes over low heat. Add two large, fresh basil leaves and stir for a minute. Add two 28-ounce cans of whole, peeled tomatoes along with thier juice and two more whole basil leaves. Bring the sauce to a boil, turn down the heat, season with salt and pepper and let it bubble away on low heat for 45 minutes. And Voila!
